  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries (or frozen, thawed)
Pastry Ingredients
  • 1 package (1 lb) phyllo dough, thawed
  • 1/2 cup unsalted butter, melted
  • Extra for dusting powdered sugar For serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until it’s smooth and creamy.
  3. Unroll the phyllo dough and brush a sheet with melted butter. Layer another sheet on top and repeat until you have about six layers.
  4. Cut the layered phyllo into squares (about 3 inches wide). Spoon a dollop of the cream cheese mixture into each square and top with a couple of fresh raspberries.
  5. Fold the corners of the phyllo over the filling, creating a little package and brush the tops with more melted butter.
Baking
  1. Place the assembled bites onto a parchment-lined baking sheet and bake for about 15-20 minutes or until crisp and golden.
  2. Allow them to cool slightly, then dust with powdered sugar before serving.

Notes

For best results, keep a damp towel over the phyllo sheets to prevent them from drying out. You can substitute raspberries with sliced strawberries or blueberries. Leftover filling can be used in parfaits or as pancake topping.
