Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons extra virgin olive oil, divided
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • ¾ teaspoon sea salt, divided
  • 2 ripe avocados, diced
  • 1 pint cherry tomatoes, halved
  • ½ red onion, finely diced
  • 1 jalapeño, seeded and minced
  • ¼ cup fresh cilantro, chopped
  • Juice of 3 limes (approximately ⅓ cup)
  • 1 tablespoon honey
  • Fresh ground black pepper to taste

Instructions

  1. Prepare the shrimp by combining with 1 tablespoon olive oil, minced garlic, red pepper flakes, and ¼ teaspoon salt.
  2. Cook the shrimp in a heated skillet over medium-high for about 2 minutes per side.
  3. Combine diced avocados, cherry tomatoes, red onion, jalapeño, and cilantro in a mixing bowl.
  4. Create the dressing by whisking together 2 tablespoons olive oil, lime juice, honey, remaining salt, and black pepper.
  5. Combine the cooled shrimp with the vegetable mixture, pour the dressing and gently toss.

Notes

Serve on butter lettuce and pair with crusty bread or corn tortillas.
