Ingredients

- 1 pound large shrimp, peeled and deveined
- 3 tablespoons extra virgin olive oil, divided
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes
- ¾ teaspoon sea salt, divided
- 2 ripe avocados, diced
- 1 pint cherry tomatoes, halved
- ½ red onion, finely diced
- 1 jalapeño, seeded and minced
- ¼ cup fresh cilantro, chopped
- Juice of 3 limes (approximately ⅓ cup)
- 1 tablespoon honey
- Fresh ground black pepper to taste
Instructions
- Prepare the shrimp by combining with 1 tablespoon olive oil, minced garlic, red pepper flakes, and ¼ teaspoon salt.
- Cook the shrimp in a heated skillet over medium-high for about 2 minutes per side.
- Combine diced avocados, cherry tomatoes, red onion, jalapeño, and cilantro in a mixing bowl.
- Create the dressing by whisking together 2 tablespoons olive oil, lime juice, honey, remaining salt, and black pepper.
- Combine the cooled shrimp with the vegetable mixture, pour the dressing and gently toss.

Serve on butter lettuce and pair with crusty bread or corn tortillas.
