Preparation
  1. In a medium bowl, whisk together the chia seeds, almond milk, maple syrup (or honey), vanilla extract, lemon juice, and lemon zest.
  2. Ensure the chia seeds are well mixed to create a pudding-like consistency.
Chilling
  1. Cover the bowl or jar and place it in the fridge for about 2 hours.
  2. Stir once or twice during chilling to break up any clumps.
Serving
  1. Spoon the pudding into serving bowls or jars.
  2. Top with your favorite fresh fruit and a sprinkle of nuts or seeds for added crunch.

Notes

Set a timer to remind you about the pudding in the fridge. Feel free to switch up the toppings. Making a double batch is recommended as it keeps well for up to a week.
