Ingredients
  

For the Chicken Marinade
  • 1 lb boneless, skinless chicken breasts
  • 2 pieces Juice of limes
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
For the Salad
  • 6 cups mixed greens (spinach, romaine, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 piece bell pepper, sliced (red, yellow, or green)
  • 1 piece avocado, sliced
  • ½ piece red onion, thinly sliced
  • ¼ cup cilantro, chopped (optional) Highly recommended
For Toppings
  • ½ cup corn (fresh or canned)
  • crumbled feta cheese (if desired)
  • Your favorite dressing (a light vinaigrette works wonders)

Method
 

Marinate the Chicken
  1. In a bowl, combine lime juice, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts, making sure they’re well-coated. Let them soak up those flavors for at least 30 minutes—longer if you have the time.
Grill the Chicken
  1. Preheat your grill (or grill pan) over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked. Once done, remove it from the grill and let it rest for a few minutes before slicing it into strips.
Build Your Salad
  1. In a large salad bowl, layer your mixed greens as the base. Then, add the sliced cherry tomatoes, bell pepper, avocado, red onion, corn, and toss them together.
Finish with Chicken and Toppings
  1. Lay the sliced grilled chicken on top and add your desired toppings. Drizzle with dressing just before serving.
