  • 2 cups shredded zucchini can substitute with cauliflower or shredded carrots
Binding and Seasoning
  • 1 large egg
  • to taste garlic powder adds flavor
  • to taste salt adjust according to preference

Method
 

Preparation
  1. Start by washing and shredding your zucchini (or any vegetable of choice).
  2. In a bowl, combine your shredded veggies with the egg and seasonings. Mix until everything is thoroughly blended.
Cooking
  1. Heat a non-stick skillet over medium heat. Add a dab of oil to prevent sticking.
  2. Drop spoonfuls of your mixture onto the skillet and let each side cook until golden brown, about 3-4 minutes per side.
  3. Use a spatula to carefully flip each piece, ensuring they stay intact.
Serving
  1. Serve hot, optionally dressed with sour cream, herbs, or a sprinkle of cheese.

Notes

If the mixture is watery, squeeze out excess moisture. Feel free to swap out veggies or spices based on what you have.
