Ingredients
  

For the Za'atar Fries
  • 4 medium medium-sized russet potatoes
  • 1-2 tablespoons olive oil
  • 2 tablespoons za'atar spice mix Make sure it's well distributed for flavor.
  • to taste Salt
For the Tahini Dip
  • ½ cup tahini
  • 2 tablespoons lemon juice
  • 1-2 cloves garlic, minced
  • as needed Water Add to adjust consistency.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel (if desired) the russet potatoes. Slice them into thin strips.
Seasoning the Fries
  1. In a large bowl, toss the potato strips with olive oil, za'atar spice, and a sprinkle of salt.
Baking
  1. Spread the seasoned fries onto a baking sheet in a single layer. Bake for about 30-35 minutes, flipping them halfway through.
Making the Tahini Dip
  1. In a bowl, combine tahini, lemon juice, and minced garlic. Gradually add water until the desired consistency is reached. Add salt to taste.
Serving
  1. Once fries are golden and crispy, serve them hot with tahini dip.

Notes

For a spicier kick, add chili flakes to the fries. Ensure even slicing for the crispiest fries. Feel free to customize the tahini dip by adding herbs or Greek yogurt.
