Preparation
- Preheat the oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand. Press into the bottom of a 9-inch springform pan and bake for about 10 minutes until golden. Let it cool.
- In a mixing bowl, beat softened cream cheese and sugar until smooth and fluffy. Add vanilla extract and flour, mixing until well combined.
- Mix in melted white chocolate and mashed strawberries.
- Add eggs one by one, mixing just until incorporated.
Baking
- Pour the filling into the cooled crust and smooth the top. Bake for about 50-60 minutes until the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for another hour to cool gradually.
Chilling and Garnishing
- Refrigerate the cheesecake for at least four hours or overnight. Before serving, top with fresh strawberries.
