  • 4 cups chicken broth Use low-sodium if preferred
  • 2 cups bok choy, chopped Feel free to substitute with kale or spinach
  • 1 cup carrots, sliced
  • 1 tablespoon soy sauce Tamari for a gluten-free version
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and ginger, stirring for about 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Add bok choy and carrots to the pot and let everything simmer together for another 10-15 minutes.
  6. Stir in the soy sauce and season with salt and pepper to taste.
  7. Ladle the soup into bowls and top with green onions, sesame seeds, or lime juice before serving.

Notes

You can easily customize this recipe by adding other vegetables or proteins. If using frozen chicken, extend cooking time slightly. Serve over rice or noodles for a heartier meal.
