Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder the darker, the better!
  • 2 cups granulated sugar because life is sweet, right?
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs the magic binders!
  • 1 cup whole milk or oat milk if you’re into that
  • 1/2 cup vegetable oil for that moistness we crave
  • 2 teaspoons vanilla extract because we’re fancy like that
  • 1 cup boiling water

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the eggs, milk, oil, and vanilla extract. Whisk until well blended.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently. Add the boiling water to create a pourable batter.
Baking
  1. Divide the batter evenly between two greased 9-inch round cake pans.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack.
Frosting
  1. Optional: Whip up some chocolate buttercream frosting to slather on top.

Notes

Be mindful of overmixing the batter to prevent a rubbery cake. Feel free to top with fresh berries or a sprinkle of sea salt for a gourmet touch.
