  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/2 cup heavy cream (or coconut milk for a lighter option)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional) Adds a nice touch to your presentation

Method
 

Cooking
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  2. Add the chicken breasts to the hot oil, cooking for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, add minced garlic and cook for about 30 seconds. Then add cherry tomatoes and sauté for a couple of minutes until they soften.
  4. Pour in the heavy cream and stir to combine. Let it simmer for about 3-4 minutes until it slightly thickens.
  5. Stir in the grated Parmesan cheese until melted. Add the baby spinach and let it wilt.
  6. Return the chicken to the skillet, coating it in the sauce. Let everything simmer for another 2-3 minutes. Adjust seasoning if necessary.
  7. Serve topped with fresh basil.

Notes

Feel free to add olives or artichokes for extra flavor. Pair with pasta or crusty bread for a complete meal.
