- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
- Add the chicken breasts to the hot oil, cooking for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, add minced garlic and cook for about 30 seconds. Then add cherry tomatoes and sauté for a couple of minutes until they soften.
- Pour in the heavy cream and stir to combine. Let it simmer for about 3-4 minutes until it slightly thickens.
- Stir in the grated Parmesan cheese until melted. Add the baby spinach and let it wilt.
- Return the chicken to the skillet, coating it in the sauce. Let everything simmer for another 2-3 minutes. Adjust seasoning if necessary.
- Serve topped with fresh basil.
Notes
Feel free to add olives or artichokes for extra flavor. Pair with pasta or crusty bread for a complete meal.
