Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces Use fresh chicken for best flavor.
  • 1 cup fresh pineapple, diced (or canned) If using canned, consider reserving juice for extra flavor.
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil For frying the chicken.
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)
  • Salt and pepper, to taste
  • Chopped green onions for garnish (optional)
  • Cooked rice to serve Serve rice underneath the chicken mixture.

Method
 

Preparation
  1. Season the chicken pieces with salt and pepper, giving them a warm hug before frying.
Making the Sauce
  1. In a bowl, whisk together the soy sauce, brown sugar, cornstarch, garlic, and ginger until smooth. Optionally, add red pepper flakes for extra spice.
Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken and cook for about 5-7 minutes, turning occasionally, until golden.
Adding Pineapple
  1. Add the diced pineapple to the chicken in the skillet and stir together.
Finishing the Dish
  1. Pour the sauce over the chicken and pineapple. Cook for an additional 3-4 minutes until the chicken is cooked through and the sauce has thickened.
Serving
  1. Ladle the Tropical Pineapple Chicken Delight over cooked rice. Garnish with chopped green onions if desired.

Notes
