Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon optional, but recommended
Wet Ingredients and Fruit
  • 1/2 cup pineapple chunks fresh or canned (drained if canned)
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
For Frying
  • Oil for frying about 2 inches deep in the pan
  • Powdered sugar for dusting for serving

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Fold in the pineapple chunks into the flour mixture.
  3. In a separate bowl, beat together the milk, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry mixture and stir until just combined; lumpy batter is okay.
Cooking
  1. In a large frying pan, heat the oil over medium-high heat until hot.
  2. Carefully drop spoonfuls of batter (golf ball-sized) into the hot oil and fry until golden brown, about 2-3 minutes per side.
  3. Remove fritters with a slotted spoon and drain them on paper towels. Dust lightly with powdered sugar before serving.

Notes

Fresh pineapple is best for texture and flavor, but canned can be used. Monitor oil temperature for optimal frying results. Consider adding coconut flakes for extra flavor.
