Cooking
- In a large frying pan, heat the oil over medium-high heat until hot.
- Carefully drop spoonfuls of batter (golf ball-sized) into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove fritters with a slotted spoon and drain them on paper towels. Dust lightly with powdered sugar before serving.
Notes
Fresh pineapple is best for texture and flavor, but canned can be used. Monitor oil temperature for optimal frying results. Consider adding coconut flakes for extra flavor.
