Triple Chocolate Cheesecake

A rich and creamy dessert that combines three types of chocolate layered on a buttery cookie crust, perfect for any celebration.

Ingredients
  

For the Crust
  • 1.5 cups 1 ½ cups chocolate sandwich cookies, crushed
  • 0.5 cups ½ cup unsalted butter, melted
For the Cheesecake Filling
  • 24 oz 24 oz cream cheese, softened that's three packages!
  • 1 cup 1 cup granulated sugar
  • 3 3 large eggs
  • 1 tsp 1 tsp vanilla extract
  • 8 oz 8 oz dark chocolate, melted and cooled
  • 8 oz 8 oz milk chocolate, melted and cooled
  • 4 oz 4 oz white chocolate, melted and cooled
For the Topping
  • Whipped cream, for garnish
  • Chocolate shavings or drizzle, optional

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the crushed chocolate cookies with melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Gradually add in the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Divide the batter into three bowls. Stir the melted dark chocolate into one bowl, the melted milk chocolate into another, and the melted white chocolate into the last.
Layering
  1. Pour the dark chocolate mixture over the crust, smoothing the top.
  2. Add the milk chocolate layer, and gently smooth it out again.
  3. Pour the white chocolate mixture on top, creating a beautiful tricolor cheesecake.
Baking
  1. Bake in your preheated oven for about 55-60 minutes. The center should be slightly jiggly, but not liquid.
Cooling
  1. Once out of the oven, let your cheesecake cool at room temperature. Then, refrigerate for at least 4 hours, or overnight.
Serving
  1. Before serving, garnish with whipped cream and chocolate shavings or drizzle of chocolate sauce.

Notes

This cheesecake is even better the next day, and you can substitute the chocolate sandwich cookies for graham crackers. If your cheesecake cracks, just cover it with whipped cream.
