Traditional Greek Lamb Shanks with Potatoes and Tomatoes

Ingredients
  

Main Ingredients
  • 4 pieces lamb shanks
  • 4 large potatoes, peeled and quartered
  • 2 cups fresh tomatoes, chopped (or one can of diced tomatoes) Canned tomatoes can be used if fresh are unavailable.
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup red wine Optional ingredient.
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • for garnish fresh parsley For presentation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Season the lamb shanks with salt and pepper.
  2. In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the lamb shanks for about 5 minutes on each side until golden brown.
Aromatics
  1. Remove the lamb shanks from the pot and set aside. In the same pot, add the sliced onions and cook until soft, about 5 minutes.
  2. Add the minced garlic and dried oregano, and sauté for another minute.
Tomato and Wine Layering
  1. Pour in the red wine (if using) and let it simmer for a couple of minutes to reduce slightly.
  2. Add the chopped tomatoes and stir everything together.
Cooking
  1. Return the lamb shanks to the pot, nestling them in the sauce. Add the quartered potatoes around them.
  2. Cover the pot with a lid and place it in the preheated oven. Let it cook for about 2 to 2.5 hours.
Serving
  1. Once cooked, take it out of the oven and let it rest for about 10 minutes.
  2. Sprinkle fresh parsley on top to serve.

Notes

Don't rush the browning of the meat for better flavor. Lamb shanks can be substituted with other cuts, and this dish works well as leftovers.
