Ingredients
  

For the Sandwich
  • 8 slices slices of hearty bread (Texas toast is ideal!)
  • 2 cups cooked turkey, shredded or sliced
  • ½ cup cooked bacon, crumbled because bacon makes everything better
  • 1 cup shredded cheese (cheddar is a great choice!)
For the Mornay Sauce
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • A pinch of nutmeg it’s like a flavor magician!

Method
 

Prepare the Mornay Sauce
  1. In a medium saucepan, melt the butter over medium heat.
  2. Stir in the flour and cook for about 1-2 minutes, until it’s lightly golden.
  3. Gradually whisk in the milk. Keep stirring until the mixture thickens—about 5-7 minutes.
  4. Remove from heat, and stir in the Parmesan cheese until it’s all melty and wonderful. Add salt, pepper, and nutmeg to taste. Set this luxurious sauce aside.
Assemble Your Sandwich
  1. Preheat your oven to 400°F (200°C).
  2. Evenly spread each slice of bread on a baking sheet.
  3. Layer your turkey on four of the slices, followed by a generous helping of Mornay sauce.
  4. Sprinkle the crumbled bacon and shredded cheese on top.
  5. Cap it with the remaining slices of bread.
Bake It All Together
  1. Slide that baking sheet into the oven and let it bake for about 10-15 minutes, until the cheese is bubbly and golden brown.
Serve and Enjoy!
  1. Slice the sandwiches in half and serve them hot. Enjoy with a side of crispy fries or a fresh salad.

Notes

If your Mornay sauce gets a little lumpier than you’d like, don’t worry—it’s just character! Use leftover turkey to save time and reduce waste. For a spicy kick, add some jalapeños.
