Preparation
- Heat sesame oil in a large skillet over medium heat.
- Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes or until the chicken is golden brown and fully cooked through.
- Toss in the chopped onion, minced garlic, shredded carrots, and red bell pepper. Sauté for an additional 3-4 minutes, or until the veggies are tender but still crispy.
- Pour in the teriyaki sauce and stir to coat everything well. Let it simmer for about 2 minutes.
Assembly
- Prepare the lettuce leaves by rinsing them under cold water and patting them dry.
- Take a generous spoonful of the chicken mixture and place it in the center of a lettuce leaf. Add optional toppings if desired, then roll it up like a burrito.
Notes
If your lettuce leaf tears during wrapping, just call it 'artisan' and carry on. You can prepare the chicken mixture ahead of time and heat when ready to eat.
