Ingredients
  

Main Ingredients
  • 1 pound boneless, skinless chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 medium red bell pepper, diced
  • 1/4 cup teriyaki sauce store-bought or homemade
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • Butter or romaine lettuce leaves (for wrapping)
Optional Toppings
  • green onions for garnish
  • sesame seeds for garnish
  • chopped cilantro for garnish

Method
 

Preparation
  1. Heat sesame oil in a large skillet over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes or until the chicken is golden brown and fully cooked through.
  3. Toss in the chopped onion, minced garlic, shredded carrots, and red bell pepper. Sauté for an additional 3-4 minutes, or until the veggies are tender but still crispy.
  4. Pour in the teriyaki sauce and stir to coat everything well. Let it simmer for about 2 minutes.
Assembly
  1. Prepare the lettuce leaves by rinsing them under cold water and patting them dry.
  2. Take a generous spoonful of the chicken mixture and place it in the center of a lettuce leaf. Add optional toppings if desired, then roll it up like a burrito.

Notes

If your lettuce leaf tears during wrapping, just call it 'artisan' and carry on. You can prepare the chicken mixture ahead of time and heat when ready to eat.
