Ingredients
  

For the Whipped Goat Cheese
  • 8 ounces 1 log of goat cheese, softened
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • to taste Salt and pepper Used for seasoning
For the Crostini
  • 1 loaf French baguette, sliced into ½ inch pieces
For the Blueberry Balsamic Glaze
  • ½ cup fresh blueberries
  • 2 tablespoons balsamic glaze
For Garnish (Optional)
  • Fresh basil leaves Optional, for garnish

Method
 

Preparation
  1. In a mixing bowl, combine your softened goat cheese, honey, fresh lemon juice, and a pinch of salt and pepper. Use a hand mixer or whisk to whip until creamy and smooth.
  2. Preheat your oven to 400°F (200°C). Lay your baguette slices on a baking sheet.
  3. Toast the baguette slices for about 8-10 minutes, or until golden brown and slightly crispy.
  4. While your bread is toasting, toss fresh blueberries into a small bowl and drizzle with balsamic glaze. Stir gently to cover blueberries.
Assembly
  1. Spread a generous amount of the whipped goat cheese on each piece of toasted baguette.
  2. Top with a spoonful of the blueberry mixture and garnish with a basil leaf if desired.
Serving
  1. Arrange crostini on a platter and serve fresh.

Notes

If you can’t find blueberry balsamic glaze, substitute with regular balsamic vinegar reduced on stovetop until thickened. Leftovers can be stored in an airtight container in the fridge for up to two days.
