Method
Cooking the Beef
- In a large skillet over medium heat, add the ground beef and cook until browned and crumbly. Drain excess fat.
Seasoning
- Stir in the taco seasoning and about 2/3 cup of water. Let it simmer for 5 minutes until thickened.
Mixing Ingredients
- Remove the skillet from heat and stir in ranch dressing, shredded cheese, diced tomatoes, and sliced olives until combined.
Preparing to Bake
- Preheat the oven to 375°F (190°C). Grease a mini muffin tin, and fill each cup with the mixture.
- Top with a sprinkle of crushed tortilla chips.
Baking
- Bake in the preheated oven for 15-20 minutes until the edges are golden brown and cheese is bubbling.
- Allow to cool for a few minutes before removing from the tin.
Serving
- Serve warm with extra ranch or salsa for dipping.
Notes
For a lighter option, use ground turkey or chicken. These bites can be made ahead of time and refrigerated until ready to bake.
