Taco Ranch Bites

Ingredients
  

For the Taco Mixture
  • 1 pound ground beef or turkey Use turkey for a healthier option.
  • 1 packet taco seasoning Pre-packaged or homemade.
  • 2/3 cup water Add to taco seasoning.
For the Filling
  • 1 cup ranch dressing For creaminess and flavor.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives Optional, for added flavor.
  • 1 cup crushed tortilla chips For topping.
  • as needed diced green onions or jalapeños Optional, for extra spice.

Method
 

Cooking the Beef
  1. In a large skillet over medium heat, add the ground beef and cook until browned and crumbly. Drain excess fat.
Seasoning
  1. Stir in the taco seasoning and about 2/3 cup of water. Let it simmer for 5 minutes until thickened.
Mixing Ingredients
  1. Remove the skillet from heat and stir in ranch dressing, shredded cheese, diced tomatoes, and sliced olives until combined.
Preparing to Bake
  1. Preheat the oven to 375°F (190°C). Grease a mini muffin tin, and fill each cup with the mixture.
  2. Top with a sprinkle of crushed tortilla chips.
Baking
  1. Bake in the preheated oven for 15-20 minutes until the edges are golden brown and cheese is bubbling.
  2. Allow to cool for a few minutes before removing from the tin.
Serving
  1. Serve warm with extra ranch or salsa for dipping.

Notes

For a lighter option, use ground turkey or chicken. These bites can be made ahead of time and refrigerated until ready to bake.
