Preparation
- Preheat your oven to 425°F (220°C).
- Chop the sweet potatoes into about 1/4-inch thick rounds. Toss these rounds with a drizzle of olive oil, salt, and pepper.
- Lay the sweet potato rounds out on a baking sheet, ensuring they’re not too crowded.
Roasting
- Pop the sweet potato rounds in the oven for about 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
Whipping the Brie
- While the sweet potatoes are roasting, add your softened brie cheese to a mixing bowl and mix until fluffy.
Assembly
- Once the sweet potato rounds are out of the oven and slightly cooled, spread a generous dollop of whipped brie on each round.
- Sprinkle the chopped pecans and cranberries on top of the brie and drizzle with honey for added sweetness.
Serving
- Arrange the rounds on a serving platter and enjoy warm or at room temperature.
Notes
You can chop pecans by placing them in a zip-top bag and gently pounding with a rolling pin. Substitute brie with cream cheese or goat cheese. Add fresh herbs for extra flavor.
