Ingredients
  

For the Sweet Potato Rounds
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil For tossing the sweet potatoes

For the Topping
  • 8 ounces brie cheese Softened
  • 1 cup chopped pecans
  • 1 cup dried cranberries Roughly chopped
  • 2 tablespoons honey or maple syrup Maple syrup for a vegan alternative

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Chop the sweet potatoes into about 1/4-inch thick rounds. Toss these rounds with a drizzle of olive oil, salt, and pepper.
  3. Lay the sweet potato rounds out on a baking sheet, ensuring they’re not too crowded.
Roasting
  1. Pop the sweet potato rounds in the oven for about 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
Whipping the Brie
  1. While the sweet potatoes are roasting, add your softened brie cheese to a mixing bowl and mix until fluffy.
Assembly
  1. Once the sweet potato rounds are out of the oven and slightly cooled, spread a generous dollop of whipped brie on each round.
  2. Sprinkle the chopped pecans and cranberries on top of the brie and drizzle with honey for added sweetness.
Serving
  1. Arrange the rounds on a serving platter and enjoy warm or at room temperature.

Notes

You can chop pecans by placing them in a zip-top bag and gently pounding with a rolling pin. Substitute brie with cream cheese or goat cheese. Add fresh herbs for extra flavor.
