Preparation
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes into chunks.
- Bring a pot of salted water to a boil and add the sweet potatoes. Cook until tender, about 20 minutes.
- Drain the sweet potatoes and mash them in a mixing bowl until smooth.
- Add sugar, milk, vanilla extract, cinnamon, nutmeg, salt, and eggs to the mashed sweet potatoes. Mix until fully combined.
- Pour the sweet potato mixture into your unbaked pie crust and smooth the top.
Baking
- Place your pie in the preheated oven and bake for about 55–60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow your pie to cool for at least an hour before serving.
Serving
- Slice it up and serve warm or chilled; a dollop of whipped cream is a delightful addition!
Notes
Peel sweet potatoes easily by roasting them in their skins until fork-tender. For a twist, add ginger or cloves, or try coconut or almond milk. Store leftovers in an airtight container for up to five days. You can freeze the pie before baking; just wrap it well.
