Pie Ingredients
  • 2 medium sweet potatoes Peeled and chopped
  • 1 cup sugar
  • ½ cup milk Or your favorite milk alternative
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 unbaked pie crust store-bought or homemade No judgment here!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into chunks.
  3. Bring a pot of salted water to a boil and add the sweet potatoes. Cook until tender, about 20 minutes.
  4. Drain the sweet potatoes and mash them in a mixing bowl until smooth.
  5. Add sugar, milk, vanilla extract, cinnamon, nutmeg, salt, and eggs to the mashed sweet potatoes. Mix until fully combined.
  6. Pour the sweet potato mixture into your unbaked pie crust and smooth the top.
Baking
  1. Place your pie in the preheated oven and bake for about 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow your pie to cool for at least an hour before serving.
Serving
  1. Slice it up and serve warm or chilled; a dollop of whipped cream is a delightful addition!

Notes

Peel sweet potatoes easily by roasting them in their skins until fork-tender. For a twist, add ginger or cloves, or try coconut or almond milk. Store leftovers in an airtight container for up to five days. You can freeze the pie before baking; just wrap it well.
