  • 2 medium sweet potatoes (about 1 cup, mashed)
  • 1 cup all-purpose flour (or whole wheat for a healthier twist)
  • 1/2 cup brown sugar for sweetness
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon for flavor
  • 1/4 teaspoon nutmeg for flavor
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk (dairy or non-dairy alternative)
  • 1 large egg
  • to taste salt optional sprinkle
  • to taste handful chopped nuts optional for crunch

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
Cooking
  1. Peel and boil sweet potatoes until fork-tender, then drain and mash until smooth.
  2. In a large bowl, combine mashed sweet potatoes, brown sugar, egg, milk, and vanilla extract. Whisk together until blended.
  3. In another bowl, mix the dry ingredients: flour, cinnamon, nutmeg, baking powder, baking soda, and optional salt.
  4. Gradually add the dry mix to the sweet potato mixture and stir until just combined.
  5. Spoon the batter into the donut pan, filling each cavity about two-thirds full. Optionally, add chopped nuts or additional cinnamon on top.
  6. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  7. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack.
  8. Optionally glaze them or sprinkle with powdered sugar for a dessert feel.

Notes

If you don’t have a donut pan, use a muffin tin instead. Feel free to experiment with spices like ginger or cardamom. You can double the batch, as they tend to disappear quickly.
