Preparation
- Preheat your oven to 350°F (175°C) and grease your donut pan.
Cooking
- Peel and boil sweet potatoes until fork-tender, then drain and mash until smooth.
- In a large bowl, combine mashed sweet potatoes, brown sugar, egg, milk, and vanilla extract. Whisk together until blended.
- In another bowl, mix the dry ingredients: flour, cinnamon, nutmeg, baking powder, baking soda, and optional salt.
- Gradually add the dry mix to the sweet potato mixture and stir until just combined.
- Spoon the batter into the donut pan, filling each cavity about two-thirds full. Optionally, add chopped nuts or additional cinnamon on top.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Let the donuts cool in the pan for a few minutes before transferring them to a wire rack.
- Optionally glaze them or sprinkle with powdered sugar for a dessert feel.
Notes
If you don’t have a donut pan, use a muffin tin instead. Feel free to experiment with spices like ginger or cardamom. You can double the batch, as they tend to disappear quickly.
