Donut Batter Ingredients
  • 1 cup mashed sweet potatoes (cooked and cooled)
  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon cinnamon optional, adds a hint of spice
  • 0.5 teaspoon nutmeg optional, adds warmth
  • 0.5 teaspoon salt
  • 2 pieces eggs
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
Optional Glaze Ingredients
  • 0.5 cup powdered sugar for glaze
  • splash milk to create the glaze

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease your donut pan.
  2. In a large bowl, combine the mashed sweet potatoes, sugar, eggs, vegetable oil, and vanilla extract. Mix until blended.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
  5. Pour the batter into the donut pan, filling each cavity about ¾ of the way full.
Baking
  1. Bake for 15-18 minutes, or until a toothpick comes out clean.
  2. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack.
Glazing (Optional)
  1. Mix powdered sugar with a splash of milk to create a glaze. Drizzle over the cooled donuts.

Notes

Steam or roast sweet potatoes instead of boiling them for better flavor. If you don’t have a donut pan, muffin tins work too—just adjust baking time. Experiment with spices like ginger or cardamom for extra flavor.
