Preparation
- Preheat your oven to 350°F (175°C) and lightly grease your donut pan.
- In a large bowl, combine the mashed sweet potatoes, sugar, eggs, vegetable oil, and vanilla extract. Mix until blended.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
- Pour the batter into the donut pan, filling each cavity about ¾ of the way full.
Baking
- Bake for 15-18 minutes, or until a toothpick comes out clean.
- Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack.
Glazing (Optional)
- Mix powdered sugar with a splash of milk to create a glaze. Drizzle over the cooled donuts.
Notes
Steam or roast sweet potatoes instead of boiling them for better flavor. If you don’t have a donut pan, muffin tins work too—just adjust baking time. Experiment with spices like ginger or cardamom for extra flavor.
