Preparation
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine the flour, rolled oats, brown sugar, granulated sugar, melted butter, and salt. Mix until crumbly.
- Press half of the crumb mixture into the bottom of a greased 8x8-inch baking pan.
- In another bowl, combine the crushed pineapple, granulated sugar, cornstarch, and vanilla extract. Stir until blended.
- Spread the pineapple mixture evenly over the pressed crust and sprinkle the remaining crumb mixture on top.
Baking
- Bake for about 30-35 minutes, or until the top is golden brown.
- Allow the bars to cool completely before slicing into squares.
Notes
Chill the bars in the fridge after cooling for easier slicing. You can substitute pineapple with other fruits like peaches or blueberries.
