  • 1 pound breakfast sausage sage-flavored if you like
  • 6 large eggs
  • 2 cups frozen hash browns no need to shred potatoes
  • 1 cup shredded cheddar cheese adds flavor
  • 1 cup milk
  • 1/2 cup maple syrup for sweetness
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

  • more maple syrup for drizzling on top
  • fresh parsley for color

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the breakfast sausage until browned and crumbly, about 5-7 minutes. Drain excess grease.
  3. In a large mixing bowl, whisk together eggs, milk, maple syrup, salt, and pepper.
  4. Stir in the frozen hash browns, cooked sausage, and shredded cheddar cheese.
  5. Pour the mixture into a greased 9x13 inch baking dish.
Baking
  1. Bake in the preheated oven for 40-45 minutes or until eggs are set and the top is golden brown.
Serving
  1. Let the casserole rest for a moment, then drizzle with more maple syrup before serving.

Notes

Can be made ahead and refrigerated overnight. Leftovers can be stored for up to 3 days. Add veggies like spinach or bell peppers for extra nutrients.
