  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

  • 1 cup pecans, roughly chopped Feel free to swap with walnuts or chocolate chips if desired.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon until well combined.
  3. In another bowl, beat the eggs lightly, then add buttermilk, vegetable oil, and vanilla extract. Whisk until incorporated.
  4. Pour the wet mixture into the dry ingredients and gently fold them together, being careful not to overmix.
  5. Gently fold in the chopped pecans.
Baking
  1. Pour the batter into the prepared loaf pan and smoothen the top. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Once done, remove the loaf from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

You can drizzle a simple glaze made from powdered sugar and milk over the cooled bread for an extra touch. If you have leftovers, store in plastic wrap or an airtight container for a few days, or slice and freeze for longer storage.
