Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon until well combined.
- In another bowl, beat the eggs lightly, then add buttermilk, vegetable oil, and vanilla extract. Whisk until incorporated.
- Pour the wet mixture into the dry ingredients and gently fold them together, being careful not to overmix.
- Gently fold in the chopped pecans.
Baking
- Pour the batter into the prepared loaf pan and smoothen the top. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Once done, remove the loaf from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
You can drizzle a simple glaze made from powdered sugar and milk over the cooled bread for an extra touch. If you have leftovers, store in plastic wrap or an airtight container for a few days, or slice and freeze for longer storage.
