Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, whisk together the vegetable oil, buttermilk, and eggs until well combined. Add the vanilla extract.
  4. Gradually fold the wet mixture into the dry mixture, combining gently.
  5. Stir in the chopped pecans until well mixed.
Baking
  1. Pour the batter into a greased bread loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  2. After baking, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Slice and serve warm or at room temperature.

Notes

You can swap pecans for walnuts or chocolate chips. For added flavor, sprinkle some cinnamon into your flour mixture. Store leftovers in an airtight container for 3-4 days, or freeze individual slices for later.
