Preparation
  1. Gather all your ingredients to streamline the process.
  2. In a small bowl, combine the ricotta cheese, sun-dried tomatoes, and a pinch of salt and pepper.
Assembly
  1. Spread the ricotta mixture onto one slice of bread. Layer with fresh spinach and top with slices of mozzarella. Finish with another slice of bread.
Cooking
  1. In a skillet over medium heat, add a pat of butter or drizzle of olive oil until shimmering.
