Preparation
- In a bowl, mix together the chopped spinach, ricotta, sun-dried tomatoes, and a pinch of salt and pepper.
Assembly
- Spread the ricotta mixture generously on two slices of bread.
- Top these with a sprinkle of shredded mozzarella.
- Place the other two slices of bread on top to create a sandwich.
Cooking
- Melt 1 tablespoon of butter in a skillet over medium heat.
- Once melted, lay your sandwiches in the pan and cook until golden brown, about 3-4 minutes, flipping halfway through.
Serving
- Remove the sandwiches from the pan and let them cool slightly before slicing in half.
- Serve with a side salad or soup for dipping.
Notes
Keep an eye on your skillet while toasting; burnt butter is not the flavor we’re aiming for! A mix of oil with butter can help raise the smoke point. Feel free to add sautéed mushrooms or pesto for an extra kick!
