Ingredients
  

For the sandwich
  • 4 slices slices of your favorite bread Sourdough or whole grain works wonders!
  • 1 cup fresh spinach, chopped Chopped fresh spinach
  • ½ cup ricotta cheese Creamy texture
  • ¼ cup sun-dried tomatoes, chopped Oil-packed for extra flavor
  • 1 cup shredded mozzarella cheese You can swap for provolone or add basil
  • 2 tablespoons butter For toasting the sandwiches
  • to taste Salt and pepper Adjust to your preference

Method
 

Preparation
  1. In a bowl, mix together the chopped spinach, ricotta, sun-dried tomatoes, and a pinch of salt and pepper.
Assembly
  1. Spread the ricotta mixture generously on two slices of bread.
  2. Top these with a sprinkle of shredded mozzarella.
  3. Place the other two slices of bread on top to create a sandwich.
Cooking
  1. Melt 1 tablespoon of butter in a skillet over medium heat.
  2. Once melted, lay your sandwiches in the pan and cook until golden brown, about 3-4 minutes, flipping halfway through.
Serving
  1. Remove the sandwiches from the pan and let them cool slightly before slicing in half.
  2. Serve with a side salad or soup for dipping.

Notes

Keep an eye on your skillet while toasting; burnt butter is not the flavor we’re aiming for! A mix of oil with butter can help raise the smoke point. Feel free to add sautéed mushrooms or pesto for an extra kick!
