Ingredients
  

For the Sugar Cookie Crust
  • 1.5 cups 1 ½ cups all-purpose flour
  • 0.5 teaspoon ½ teaspoon baking soda
  • 0.25 teaspoon ¼ teaspoon salt
  • 0.5 cup ½ cup butter, softened Should be room temperature
  • 0.75 cup ¾ cup granulated sugar
  • 1 piece 1 egg Large egg
  • 1 teaspoon 1 teaspoon vanilla extract
For the Cheesecake Filling
  • 16 oz 16 oz cream cheese, softened Must be softened for easy mixing
  • 0.75 cup ¾ cup granulated sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 2 large 2 large eggs Large eggs, add one at a time
  • 1 tablespoon 1 tablespoon all-purpose flour For binding the filling
For the Topping (optional)
  • Whipped cream, sprinkles, or fresh fruit for decoration Customize to your liking

Method
 

Preparation
  1. Preheat Your Oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, beat the softened butter and sugar until light and fluffy, then add the egg and vanilla, mixing until fully combined.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until a dough forms.
  5. Press the dough into the bottom of a greased 9-inch springform pan.
Cheesecake Filling Preparation
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add the sugar, vanilla, and one egg at a time, mixing well in between each addition.
  3. Stir in 1 tablespoon of flour to bind the mixture.
  4. Pour the cheesecake mixture over the sugar cookie crust, smoothing it out.
Baking
  1. Bake in the oven for 45-50 minutes until the edges look set and the center is slightly jiggly.
  2. Allow the cheesecake to cool at room temperature for about an hour.
Chilling
  1. Refrigerate the cheesecake for at least 4 hours or overnight.
Serving
  1. Decorate with whipped cream, sprinkles, or fresh fruit before serving.
  2. Cut into slices and enjoy!

Notes

Chill Out: The longer it sits in the fridge, the better it’ll taste! Customize Your Topping with caramel or chocolate sauce. Use a sharp knife dipped in hot water for clean slices.
