Preparation
- Preheat Your Oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking soda, and salt.
- In another bowl, beat the softened butter and sugar until light and fluffy, then add the egg and vanilla, mixing until fully combined.
- Gradually add the dry ingredients to the wet ingredients. Mix until a dough forms.
- Press the dough into the bottom of a greased 9-inch springform pan.
Cheesecake Filling Preparation
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the sugar, vanilla, and one egg at a time, mixing well in between each addition.
- Stir in 1 tablespoon of flour to bind the mixture.
- Pour the cheesecake mixture over the sugar cookie crust, smoothing it out.
Baking
- Bake in the oven for 45-50 minutes until the edges look set and the center is slightly jiggly.
- Allow the cheesecake to cool at room temperature for about an hour.
Chilling
- Refrigerate the cheesecake for at least 4 hours or overnight.
Serving
- Decorate with whipped cream, sprinkles, or fresh fruit before serving.
- Cut into slices and enjoy!
