  • 3 cloves garlic, minced

  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 4 cups beef broth (or vegetable broth) Use vegetable broth for a vegetarian option.
  • 1 cup cooked rice Brown or white rice can be used.
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
Optional Toppings
  • shredded cheese Choose your favorite type.
  • fresh parsley Chopped for garnish.
  • sour cream For a creamy finish.

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat.
  2. Add in the diced onion and cook until it starts to soften, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
Cooking
  1. Toss in the diced bell peppers and sauté for about 5 minutes until they start to soften.
  2. Pour in the diced tomatoes and tomato sauce, and then add the beef or vegetable broth.
  3. Let this mixture come to a gentle simmer.
  4. Add in the cooked rice, Italian seasoning, salt, and pepper. Stir well.
  5. Let it simmer for another 15-20 minutes to blend all flavors.
Serving
  1. Ladle the soup into bowls and top with optional add-ons like shredded cheese, fresh parsley, or sour cream.
