  • 4 large eggs Room temperature.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk Room temperature.
  • 1 1/2 cups fresh strawberries, diced
  • Powdered sugar, for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one by one along with the vanilla extract, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the whole milk. Begin and end with the flour mixture. Mix until just combined.
  5. Gently fold in the diced strawberries.
Baking
  1. Pour the batter into a greased Bundt or loaf pan, spreading it evenly. Bake for about 60-70 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving.
