Ingredients
  

For the Roll Cake
  • 3 large large eggs Ensure eggs are at room temperature.
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar, divided Half used for the roll cake.
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • a pinch salt
For the Cheesecake Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream (store-bought or homemade)
For the Strawberry Filling
  • 2 cups fresh strawberries, hulled and sliced Preferably fresh for best flavor.
  • 1/4 cup granulated sugar To macerate the strawberries.
For Topping
  • Whipped cream (optional) Add more fluff if desired.
  • Additional strawberries for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together eggs, vanilla extract, and half the granulated sugar until pale and fluffy.
  3. Sift together the flour, baking powder, and salt in a separate bowl. Gently fold this mixture into the egg mixture.
  4. Spread the batter into a greased and lined baking sheet (preferably 15x10 inches) and bake for approximately 12-15 minutes until golden.
  5. Once baked, dust a kitchen towel with powdered sugar. Flip the cake onto the towel and gently roll it up. Let it cool completely.
Making the Fillings
  1. In a medium bowl, combine sliced strawberries with granulated sugar and let them sit for about 10-15 minutes.
  2. In a separate mixing bowl, beat the cream cheese and powdered sugar until smooth. Gently fold in the whipped cream.
Assembling the Cake
  1. Unroll the cooled cake and spread a layer of cheesecake filling across it, then top with syrup-soaked strawberries.
  2. Carefully re-roll the cake without the towel and place it seam-side down onto a serving platter.
  3. If desired, top with additional whipped cream and fresh strawberries.

Notes

Ensure eggs are at room temperature for better volume. Allowing the cake to cool completely before unrolling is vital to avoid sogginess. You can add a layer of your favorite fruit jam for variety.
