For the Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 cups unsalted butter, softened
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 4 large eggs
For the Whipped Cream
  • 2 cups heavy whipping cream
  • 0.75 cups powdered sugar
  • 1 teaspoon vanilla extract
For the Strawberries
  • 4 cups sliced fresh strawberries
  • 0.5 cups granulated sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
Make the Cake Batter
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the softened butter, milk, and vanilla. Mix on medium speed for about 2 minutes, until the mixture is smooth.
  2. Add the eggs, one at a time, beating just until incorporated.
Bake
  1. Divide the batter evenly into the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the Strawberries
  1. While the cake cools, toss the sliced strawberries with sugar and let them sit for about 30 minutes to create strawberry syrup.
Make the Whipped Cream
  1. Beat the heavy cream, powdered sugar, and vanilla in a cold bowl until soft peaks form.
Assemble the Cake
  1. Once the cakes are cool, place one layer on a serving plate. Spread a portion of whipped cream on top, followed by a layer of the sugared strawberries.
  2. Repeat with the second layer. Top with the final cake layer, and adorn the top with more whipped cream and remaining strawberries.

Notes

Chill your bowl and beaters for whipped cream. Level cake tops if they domed, and allow layers to soak in strawberry syrup for extra flavor.
