Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
Wet Ingredients
  • 0.5 cups unsalted butter, softened at room temperature
  • 1 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cups lemonade (homemade or store-bought)
Fruit
  • 0.33 cups chopped strawberries (fresh is best!)
Optional Garnish
  • strawberry slices and lemon zest for garnishing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
Combining Mixtures
  1. Alternate adding your dry mixture and lemonade to the wet mixture. Mix until just combined.
  2. Gently fold in the chopped strawberries.
Baking
  1. Pour the batter into a greased round cake pan (9-inch).
  2. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  3. Let the cake cool completely before removing it from the pan.
Garnishing
  1. Garnish with fresh strawberry slices and a sprinkle of lemon zest.

Notes

Add zest for extra flavor and don’t skip the cooling time. You can double the recipe for a two-layer cake!
