Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
For the strawberry crunch topping
  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup crushed nuts (like almonds or pecans)
  • 1/4 cup granulated sugar

Method
 

Create the Crust
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until mixed well.
  3. Press the mixture firmly into the bottom of an 8-inch square baking pan.
  4. Bake for about 10 minutes and let cool.
Whip Up the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, beating until combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture.
Assemble the Chunks
  1. Spoon the cheesecake filling over the cooled crust and smooth it out.
  2. Refrigerate for 4-6 hours or until set.
The Crunchy Topping
  1. Combine crushed freeze-dried strawberries, crushed nuts, and granulated sugar in a bowl.
  2. Once cheesecake is set, sprinkle the mixture on top.
Cut & Serve
  1. Using a sharp knife, cut into squares or chunks.
  2. Serve on a platter and enjoy!

Notes

Can be made a day in advance. Switch strawberries for other fruits for different flavors.
