Method
Preparation
- Start by crushing your graham crackers in a resealable bag using a rolling pin or a heavy pan.
- In a large bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing well. Fold in the whipped cream gently until everything is well combined.
- In another bowl, combine the crushed strawberries, crushed graham crackers, melted butter, sugar, and a pinch of salt. Mix until it resembles a crumbly texture.
Assembly
- Grab a rectangular dish (about 9x13 inches) and start layering. Spread half of the cheesecake mixture evenly on the bottom.
- Next, sprinkle half of the strawberry crunch on top. Repeat with the remaining cheesecake mixture and finish with the last layer of strawberry crunch.
Chilling
- Cover the dish with plastic wrap and let it chill in the refrigerator for at least 4 hours, or overnight.
Notes
Fresh strawberries provide the best flavor, but frozen strawberries can also be used. Adjust sugar to your taste, and consider drizzling chocolate sauce or adding a mint sprig for presentation.
