Ingredients

  • 1 cup crushed graham crackers
  • 1 cup strawberry-flavored cereal (think crunch!)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping (like Cool Whip)
  • Fresh berries Fresh strawberries, chopped (optional for extra flavor)

Method
 

Preparation of Crunch Coating
  1. In a mixing bowl, combine the crushed graham crackers, strawberry cereal, melted butter, and granulated sugar. Mix well until everything is evenly coated.
Preparation of Cheesecake Mix
  1. In another bowl, whisk together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Fold in the whipped topping gently and, if you desire, mix in the chopped strawberries for that fresh fruit flavor.
Assembling the Bites
  1. Spoon a tablespoon of the cheesecake mixture into your hands and roll it into a small ball.
  2. Dip each ball into your crunch coating, making sure they’re well-covered.
Chill
  1. Place the bites on a parchment-lined tray and refrigerate for at least an hour.
Serving
