Preparation of Crunch Coating
- In a mixing bowl, combine the crushed graham crackers, strawberry cereal, melted butter, and granulated sugar. Mix well until everything is evenly coated.
Preparation of Cheesecake Mix
- In another bowl, whisk together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the whipped topping gently and, if you desire, mix in the chopped strawberries for that fresh fruit flavor.
Assembling the Bites
- Spoon a tablespoon of the cheesecake mixture into your hands and roll it into a small ball.
- Dip each ball into your crunch coating, making sure they’re well-covered.
Chill
- Place the bites on a parchment-lined tray and refrigerate for at least an hour.
Serving
- Once they’ve chilled, serve the strawberry crunch cheesecake bites on a pretty platter.
