Preparation
- In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and resembles wet sand.
- Press the mixture firmly into the bottom of a cupcake tray lined with paper liners to form a solid base.
Making the Cheesecake Filling
- In another bowl, beat the softened cream cheese until it’s smooth and fluffy.
- Add the powdered sugar and vanilla extract, mixing until well blended.
- Fold in the chopped strawberries.
Assembly
- Evenly distribute the cheesecake mixture over the prepared crust in the cupcake tray and smooth it out with a spatula.
Chilling
- Refrigerate for at least 2 hours to allow the cheesecake to set.
Final Touch
- Once set, remove the bites from the tray and top each one with whipped cream and optionally decorate with strawberry slices.
Notes
Make Ahead: Store in the refrigerator for up to 3-4 days. These bites freeze well for about two months. Customize with different fruits or nuts if desired.
