Ingredients
  

For the Filling
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh strawberries, diced
For the French Toast
  • 8 slices thick bread (brioche or challah works best!)
  • 4 large eggs
  • 1/2 cup milk
  • 2 tbsp cinnamon
  • 1 tsp vanilla extract
  • Butter or cooking spray for frying
  • Additional strawberries for topping (optional)
  • Whipped cream for serving (because, why not?)

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth. Then gently fold in the diced strawberries.
  2. Take two slices of thick bread and spread a generous spoonful of the cheesecake filling onto one slice. Top it with the other slice to create a sandwich. Repeat for the remaining slices.
  3. In a bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.
  4. Melt butter or spray cooking spray in a skillet or griddle over medium heat.
Cooking
  1. Dip each stuffed sandwich into the egg mixture, allowing it to soak up for a few seconds on each side, then place them on the hot skillet.
  2. Cook for about 3-4 minutes on each side or until golden brown.
Serving
  1. Dust the cooked stuffed French toast with powdered sugar and top with additional strawberries and a dollop of whipped cream.

Notes

You can use different types of bread such as sourdough or whole grain. Substitute strawberries with blueberries or peaches if they are out of season. Assemble the stuffed sandwiches the night before for easy morning prep!
