  • 1 package (8 oz) cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup fresh strawberries, sliced Feel free to mash them a bit for extra sweetness!
For the French Toast
  • 8 slices thick white bread (Challah or brioche are perfect)
  • 4 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon Optional, but it adds good flavor!
  • 1 tbsp butter For cooking
  • to taste Maple syrup For serving

Preparation
  1. In a bowl, beat together the softened cream cheese and powdered sugar until smooth. Gently fold in the sliced strawberries.
  2. Take your pieces of thick bread and spread a generous amount of the cream cheese mixture on one slice. Top it with another slice of bread to form a sandwich. Repeat until all ingredients are used.
Cooking
  1. In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
  2. Preheat a non-stick skillet over medium heat and add butter.
  3. Dip each sandwich in the egg mixture, coating both sides well. Place the sandwiches on the skillet and cook until golden brown on both sides, about 3-4 minutes each side.
Serving
  1. Slice the stuffed French toast in half, drizzle with warm maple syrup, and serve.
