Ingredients
  

For the crust
  • 1 box graham cracker crumbs You can use any cookie crumbs.
  • 1/2 cup unsalted butter, melted
For the filling
  • 2 cups fresh strawberries, sliced Frozen strawberries can be used as a substitute.
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Method
 

Preparation
  1. Preheat your oven to 350°F if you're using traditional cookies.
  2. In a medium bowl, mix the graham cracker crumbs with melted butter until combined.
  3. Spread this mixture into a 9×13-inch baking dish to form your crust.
  4. If using real cookies, bake for about 8-10 minutes; otherwise, set aside.
Filling
  1. In a large bowl, combine softened cream cheese and powdered sugar. Beat until smooth.
  2. In another bowl, whip the heavy cream until soft peaks form.
  3. Fold the whipped cream into the cream cheese mixture and stir in the vanilla extract.
  4. Beat in the sour cream until well combined.
Assembly
  1. Spread half of the cream cheese mixture over the crust.
  2. Add half of the sliced strawberries.
  3. Repeat with the remaining cream cheese mixture and top with the rest of the strawberries.
Chill
  1. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Notes

If fresh strawberries are out of season, frozen strawberries work great. You can also experiment with lemon zest or different berries.
