Preparation
- Preheat your oven to 350°F if you're using traditional cookies.
- In a medium bowl, mix the graham cracker crumbs with melted butter until combined.
- Spread this mixture into a 9×13-inch baking dish to form your crust.
- If using real cookies, bake for about 8-10 minutes; otherwise, set aside.
Filling
- In a large bowl, combine softened cream cheese and powdered sugar. Beat until smooth.
- In another bowl, whip the heavy cream until soft peaks form.
- Fold the whipped cream into the cream cheese mixture and stir in the vanilla extract.
- Beat in the sour cream until well combined.
Assembly
- Spread half of the cream cheese mixture over the crust.
- Add half of the sliced strawberries.
- Repeat with the remaining cream cheese mixture and top with the rest of the strawberries.
Chill
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Notes
If fresh strawberries are out of season, frozen strawberries work great. You can also experiment with lemon zest or different berries.
