Ingredients
  

Donuts
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Cheesecake Filling
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • to taste powdered sugar for dusting Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, mix the buttermilk, melted butter, egg, and vanilla extract until well combined.
  4. Gradually stir the wet ingredients into the dry mixture until just combined. Avoid overmixing.
  5. Pour the batter into the greased donut pan, filling each cavity about halfway.
Baking
  1. Bake the donuts for about 10-12 minutes until lightly golden.
  2. Let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack.
Cheesecake Filling
  1. Beat together the softened cream cheese, powdered sugar, and vanilla in a bowl until creamy.
  2. Gently fold in the diced strawberries.
  3. Once the donuts are cool, fill them with the cheesecake mixture using a piping bag or small spoon.
  4. Dust with powdered sugar if desired.

Notes

Store leftover donuts in an airtight container in the fridge for up to 3 days. These can be made in advance but fill with cheesecake right before serving for freshness.
