Preparation
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, mix the buttermilk, melted butter, egg, and vanilla extract until well combined.
- Gradually stir the wet ingredients into the dry mixture until just combined. Avoid overmixing.
- Pour the batter into the greased donut pan, filling each cavity about halfway.
Baking
- Bake the donuts for about 10-12 minutes until lightly golden.
- Let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack.
Cheesecake Filling
- Beat together the softened cream cheese, powdered sugar, and vanilla in a bowl until creamy.
- Gently fold in the diced strawberries.
- Once the donuts are cool, fill them with the cheesecake mixture using a piping bag or small spoon.
- Dust with powdered sugar if desired.
Notes
Store leftover donuts in an airtight container in the fridge for up to 3 days. These can be made in advance but fill with cheesecake right before serving for freshness.
