- In a medium bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold in the diced strawberries and whipped cream until fully combined.
- Scoop about a tablespoon of the creamy mixture, roll it into a ball, and then coat it in the crushed graham crackers.
- Place the bites on a baking sheet and chill in the refrigerator for at least 30 minutes.
- Serve cold, optionally drizzled with chocolate sauce.
