  • 1 teaspoon vanilla extract Enhances the flavor of the cheesecake.
  • 1 cup fresh strawberries, hulled and diced Can substitute with blueberries or raspberries if desired.
  • 1/2 cup whipped cream Use store-bought or homemade whipped cream for ease.

Preparation
  1. Crush the graham crackers into fine crumbs using a food processor or a rolling pin and ziplock bag.
  2. In a medium bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Gently fold in the diced strawberries and whipped cream until fully combined.
  4. Scoop about a tablespoon of the creamy mixture, roll it into a ball, and then coat it in the crushed graham crackers.
  5. Place the bites on a baking sheet and chill in the refrigerator for at least 30 minutes.
  6. Serve cold, optionally drizzled with chocolate sauce.

Notes

Feel free to mix graham cracker crumbs with chopped nuts or coconut for extra flavor. You can make these bites a day in advance for even better taste! Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.
