  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract

  • 2 cups powdered sugar

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Stir until the mixture is well blended.
Shaping and Baking
  1. Using a cookie scoop or two tablespoons, drop equal portions of dough onto the prepared baking sheets.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden. Let them cool completely on wire racks.
Preparing the Filling
  1. While the cookies are cooling, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until light and fluffy.
Assembly
  1. Once your cookies are cooled, flip half of them over and spread a generous layer of frosting on each. Top with another cookie to create a sandwich.
