- In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Stir until the mixture is well blended.

- Using a cookie scoop or two tablespoons, drop equal portions of dough onto the prepared baking sheets.
- Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden. Let them cool completely on wire racks.
Preparing the Filling
- While the cookies are cooling, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until light and fluffy.
Assembly
- Once your cookies are cooled, flip half of them over and spread a generous layer of frosting on each. Top with another cookie to create a sandwich.
- For a fun touch, sprinkle some crushed freeze-dried strawberries or colorful sprinkles on top of the filling.
