Baking

- Allow the cookies to cool for about 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
Filling and Assembly
- In the meantime, beat together the whipped cream cheese, powdered sugar, and vanilla extract until smooth and creamy. If you’re feeling adventurous, fold in some chopped strawberries.
- Take one cookie, spread a generous amount of the cream cheese filling on the flat side, and then top it off with another cookie. Roll the edges in sprinkles if desired.
