Ingredients
  

For the chicken
  • 1 lb boneless, skinless chicken thighs chicken breasts work too
  • 1/2 cup soy sauce
  • 1/2 cup orange juice freshly squeezed is best
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch to thicken the sauce
For the Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp garlic powder
  • Pinch of paprika
To serve
  • 2 cups cooked rice white or brown
  • Slaw mix optional - adds a nice crunch
  • Green onions, sliced for garnish
  • Sesame seeds for garnish

Method
 

Marinating the Chicken
  1. In a bowl, mix together soy sauce, orange juice, honey, garlic powder, and ginger. Add the chicken thighs and let them marinate for at least 15 minutes.
Cooking the Chicken
  1. Heat a large skillet over medium-high heat. Add the marinated chicken thighs. Cook for about 5-7 minutes on each side until golden and cooked through.
Thickening the Sauce
  1. Mix cornstarch with a tablespoon of water until smooth. Pour that into the skillet with the chicken. Stir until the sauce thickens, around 2-3 minutes.
Making the Yum Yum Sauce
  1. In a separate bowl, whisk together mayonnaise, ketchup, rice vinegar, sugar, garlic powder, and a pinch of paprika until combined.
Serving It Up
  1. To assemble, start with cooked rice, add the sticky chicken, drizzle with Yum Yum sauce, and top with slaw, green onions, and sesame seeds.

Notes

For variations, use other fruit juices if you don't have orange juice, and throw in steamed veggies for added nutrition. Make ahead and reheat for quick dinners.
