Sticky Orange Chicken Bowls with Yum Yum Sauce

Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs
  • 1/2 cup orange juice freshly squeezed works best
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
For the Bowls
  • 2 cups cooked rice white or brown
  • 1 cup broccoli florets
  • to taste Green onions for garnishing
  • to taste Sesame seeds for garnishing
For the Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • pinch cayenne pepper optional for heat

Method
 

Marinate the Chicken
  1. In a bowl, combine the orange juice, soy sauce, honey, cornstarch, garlic, and ginger.
  2. Add the chicken thighs and let them marinate for at least 30 minutes (or up to a few hours in the fridge if you've got the time!).
Cook the Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Remove chicken from the marinade and cook for about 5-7 minutes on each side, or until the chicken is cooked through and caramelized, basting with the leftover marinade.
Prepare the Veggies
  1. While the chicken cooks, steam the broccoli, bell pepper, and carrots until tender yet still crisp—about 5 minutes.
Make the Yum Yum Sauce
  1. In a small bowl, whisk together all the ingredients for the Yum Yum sauce until smooth.
  2. Adjust the sugar and cayenne to your liking.
Assemble the Bowls
  1. In each bowl, start with a base of rice, add your cooked chicken, pile on the steamed veggies, and drizzle generously with Yum Yum sauce.
  2. Sprinkle with green onions and sesame seeds.

Notes

You can easily make the marinade and Yum Yum sauce in advance, and swap proteins like shrimp or firm tofu for a different meal. If the sauce looks lumpy while mixing, don’t worry—it just means your flavors are coming together!
