Method
Preparation
- Start by cutting your chicken into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
Cooking the Chicken
- Once hot, add the chicken and sauté until it’s cooked through and golden brown (about 6-8 minutes).
Making the Sticky Sauce
- In a bowl, whisk together the orange juice, soy sauce, and honey until combined.
- In a small bowl, mix the cornstarch with the water until smooth.
- Add the orange mixture to the skillet with the chicken, then stir in the cornstarch mixture.
- Cook for another 2-3 minutes until the sauce gently thickens and clings to the chicken.
Preparing the Yum Yum Sauce
- In a small bowl, combine mayonnaise, ketchup, rice vinegar, sugar, paprika, and a pinch of salt.
- Mix until all ingredients are harmonious.
Serving
- Serve the sticky chicken over a bed of rice or quinoa.
- Drizzle generously with Yum Yum Sauce, and sprinkle with chopped green onions and sesame seeds.
- Voilà! Dinner is served!
Notes
Make Extra Sauce: You might want additional Yum Yum Sauce. This stuff is so good you’ll want to slather it on everything! Feel free to add steamed broccoli, bell peppers, or avocado for a lovely crunch. This dish keeps well in the fridge for up to three days.
