Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs (or breast, if you prefer)
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup orange juice freshly squeezed gives the best taste!
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • Cooked rice or quinoa for serving
  • Chopped green onions for garnish
  • Sesame seeds for that extra flair!
For the Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon paprika
  • a pinch salt

Method
 

Preparation
  1. Start by cutting your chicken into bite-sized pieces and season with salt and pepper.
  2. In a large skillet, heat the olive oil over medium heat.
Cooking the Chicken
  1. Once hot, add the chicken and sauté until it’s cooked through and golden brown (about 6-8 minutes).
Making the Sticky Sauce
  1. In a bowl, whisk together the orange juice, soy sauce, and honey until combined.
  2. In a small bowl, mix the cornstarch with the water until smooth.
  3. Add the orange mixture to the skillet with the chicken, then stir in the cornstarch mixture.
  4. Cook for another 2-3 minutes until the sauce gently thickens and clings to the chicken.
Preparing the Yum Yum Sauce
  1. In a small bowl, combine mayonnaise, ketchup, rice vinegar, sugar, paprika, and a pinch of salt.
  2. Mix until all ingredients are harmonious.
Serving
  1. Serve the sticky chicken over a bed of rice or quinoa.
  2. Drizzle generously with Yum Yum Sauce, and sprinkle with chopped green onions and sesame seeds.
  3. Voilà! Dinner is served!

Notes

Make Extra Sauce: You might want additional Yum Yum Sauce. This stuff is so good you’ll want to slather it on everything! Feel free to add steamed broccoli, bell peppers, or avocado for a lovely crunch. This dish keeps well in the fridge for up to three days.
