Ingredients
  

Stuffed Peppers
  • 4 large large bell peppers (any color)
  • 1 lb ground turkey or beef
  • 1 cup cooked rice
  • 1 can diced tomatoes (15 oz)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • to taste Shredded cheese for topping
  • optional Sour cream and olives for decoration Use to create spooky faces.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Slice the tops off the peppers and remove the seeds and membranes.
Cooking
  1. In a large skillet over medium heat, brown the ground turkey or beef. Drain any excess fat.
  2. Stir in the cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Let it simmer for about 10 minutes.
  3. Fill each bell pepper with the delicious mixture.
  4. Place the stuffed peppers in a baking dish and sprinkle shredded cheese on top.
  5. Cover with foil and bake for about 30 minutes, then remove the foil and bake for an additional 10 minutes.
  6. Let them cool for a few minutes before decorating with sour cream and olives for spooky faces.

Notes

Feel free to experiment with the designs on the peppers! You can make this dish vegetarian by using black beans and mixed veggies instead of ground meat.
