Ingredients
  

Main Ingredients
  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste pepper
  • 1 cup marinara sauce can be homemade or jarred
  • black olives for creating eye expressions
  • fresh basil for decoration

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise, using a towel for stability.
  3. Scoop out seeds and stringy bits with a spoon.
Season and Roast
  1. Drizzle olive oil inside the squash and season with salt and pepper.
  2. Place halves cut-side down on a baking sheet and roast for 30 to 40 minutes until tender.
Form the Ghosts
  1. Let the squash cool, then use a fork to scrape the flesh into strands.
  2. Spoon marinara sauce into the center of the squash.
Create the Ghost Faces
  1. Slice black olives into circles for eyes.
  2. Decorate each squash ghost with basil.

Notes

For easier slicing, microwave the spaghetti squash for a few minutes before cutting. Store leftovers in an airtight container in the fridge for up to three days.
