- Slice the spaghetti squash in half lengthwise, using a towel for stability.
- Scoop out seeds and stringy bits with a spoon.
Season and Roast
- Drizzle olive oil inside the squash and season with salt and pepper.
- Place halves cut-side down on a baking sheet and roast for 30 to 40 minutes until tender.
Form the Ghosts
- Let the squash cool, then use a fork to scrape the flesh into strands.
- Spoon marinara sauce into the center of the squash.
Create the Ghost Faces
- Slice black olives into circles for eyes.
- Decorate each squash ghost with basil.
Notes
For easier slicing, microwave the spaghetti squash for a few minutes before cutting. Store leftovers in an airtight container in the fridge for up to three days.
